Chicken Pot Pie
Ingredients
1/4 c butter
1 c minced onion
1 t garlic
1 c chopped celery
1 c diced carrots
1 c sliced mushrooms
1/4 c flour
2 c chicken broth
1/2 c cream
3 c shredded cooked chicken
salt and pepper to taste
1 puff pastry sheet
Directions

Preheat oven to 400 F.

Spray a pie pan with non-stick spray and set aside.

Melt butter in a large saucepan.

Add onions and garlic.

Cook until onions are slightly caramelized.

Add celery, carrots, and mushrooms.

Add flour and slowly stir in broth.

Stir until slightly thickened.

Stir in the cooked chicken and cream.

Allow to simmer for 5 minutes.

Season with salt and pepper to taste.

Pour into pie pan.

Place puff pastry over pie pan.

Bake until crust is golden brown (approximately 30 minutes).

Remove from oven and allow to cool for a few minutes to set up a bit.
